Plain Doesn’t Mean Boring


The simple pleasures are often the most satisfying.

INGREDIENTS

  • 1 cup spelt
  • 1/2 cup rye flour
  • 1 cup water
  • 1/4tsp salt
     

PREPARATION

  •  Mix all ingredients
  •  Let your dough rise for 2-12 hours, at room temperature (15-20°C
  •  Place your dough in the LID of your Dutch over, placing the main body as a very tall cover.

COOKING

  • Preheat your oven to 230°C about 15 mins before cooking
  • Place Dutch oven in lower middle of your oven
  • After 30 mins, lower temperature to 200°C and remove Dutch oven, leaving bread in lid
  • Cool on wire rack for at least 60 minutes (so it cuts well)

SERVING

  • Slice and eat with cheeses. meats, or even just butter.
